It is getting colder everyday in Melbourne. Japanese hot pot is one of the easiest Japanese dishes you can make and it’s also an awesome comfort food. The miso + corn + butter combination is a unique Hokkaido style hot pot. It definately makes you feel warm.
Ingredients (serves 4)
I used the ingredients below but you can use any left-over vegetables in your fridge.
-100g enoki mushrooms (regular mushrooms are just as good)
-6 small potatoes – cut into approx 4 circles
-1/4 carrot – sliced
-1/6 wombock (lettuce or spinach also goes well in hot pot )
-3 spring onions – cut into 5cm lengths
-100g firm tofu – cubed
-200g sliced beef (or any meat or fish)
– 2 knobs corn – shucked
for soup base
1.2L cold water
1 satchel SAORI 100% Natural Japanese Dashi Broth
4-5 tbsp miso paste
2 tbsp Japanese soy sauce (or tamari)
1 tbsp mirin
1 tbsp butter
Optional: SAORI Yuzu Spice
1: place all the “ingredients” in a circle around the pot & then put the corn on the top middle
2: put in 1 satchel SAORI 100% Natural Japanese Dashi Broth then pour water in
3: put the lid on. Cook it over a high heat, bring to boil then simmer for 15-20 minutes
4: add soy sauce, mirin then melt in miso paste. Place butter in the middle
5. serve into bowls and enjoy your Hokkaido style hot pot
*I like having a dash of SAORI Yuzu Spice for extra zing (optional)
If you have any soup left over, you can add cooked rice and turn it into a delish rice porridge the next day!
