At markets, many people ask me “Do you have any good tofu recipes?” so today, I am sharing two tofu recipes using beautiful seasonal vegetables. They both use SAORI TSUYU Sauce but they are totally different flavoures.
Spring Tofu Recipe 1 – smashed silken tofu with beautiful spring greens (syungiku shiroae) recipe
【ingredients – serves 2】
100g spring greens – boil for a few minutes, drain and cut into 1cm lengths. I used my home grown chrysanthemum but it is hard to find so you can use spinach, silver beet or kale instead
200g silken tofu
2 tbsp white sesame seeds – dry roasted
2 tbsp SAORI Tsuyu Sauce
1 tbsp brown sugar
SAORI Premium Grade Bonito Fish Seasoning – optional
【recipe】
1: combine all the ingredients in a large bowl and mix well
2: garnish with SAORI Premium Grade Bonito Seasonng for extra depth of flavour
Spring Tofu Recipe 2 – Sauteed fried tofu, enoki mushrooms and asparagus (atsuage aspara itame) recipe
【ingredients – serves 2】
1 knob of garlic – finely chopped
200g semi fried tofu – thinly sliced
5 asparagus – thinly sliced
100g enoki mushrooms – stems removed
2 tbsp pure sesame oil
2 tbsp SAORI Tsuyu Sauce
salt to taste
Optional – SAORI Japanese Rayu Chilli
【recipe】
1: simmer garlic in sesame oil until golden brown (put garlic in cold oil – not hot)
2: add asparagus and continue to cook for a further few minutes
3: add enoki mushrooms and semi fried tofu. Add SAORI Tsuyu Sauce then cook another few minutes
4: stop the heat add salt to taste
5: drizzle on SAORI Japanese Rayu Chilli
